I very seldom find a salad recipe that I don’t like and this summer salad recipe is no exception. Not only can you use delicious greens and other veggies straight from your garden, this one also has grilled corn and chicken.
It’s a salad that can double as an entrée and it is absolutely to die for delicious. The grilled corn gives it such a great summer flavor and the ingredients for this one can also be found during the colder months, so you can enjoy it year round – as long as you don’t mind grilling in the winter.
I really do love a good salad and this is seriously one of my favorites. My family loved it, too. We used fresh corn from our garden along with fresh garden greens like romaine lettuce and baby spinach.
You could of course, mix up whatever salad greens you want, or even buy your greens already mixed, however you want to do it. This is a really simple salad and the homemade dressing is amazing.
This would be a great entrée salad to serve along with a yummy soup, like this homemade broccoli and cheese soup.
You can have this ready to cook in about 10 minutes and honestly, the only cooking required is to grill the corn on the cob and the chicken. You can grill them both at the same time and have everything ready to assemble.
The dressing is a simple mixture of mayonnaise, sour cream and spices and only takes a few minutes to mix together. Honestly, this is one of the easiest summer salads you have ever made and it’s also one of the tastiest!

Add spices to chicken and grill until done
Use your favorite mixture of salad greens straight from the garden or grab a bag at your local grocery store
The combination of chicken, corn and homemade dressing make this a tasty summer salad
- 3 chicken tenders, boneless
- 1 tbsp of chicken seasoning
- 1 corn cob, grilled
- Green salad mix
- 1 cup of sour cream
- ½ cup of mayonnaise
- 1 tbsp. of dry parsley
- Salt and pepper to taste
- Rub chicken pieces with salt and chicken seasoning. Place on a heated grill and grill until cooked through (about 10 minutes).
- Slice chicken into strips. Cut corn kernels off the cob.
- For the dressing, mix mayonnaise with sour cream, parsley, salt and pepper.
- Put salad on a plate, add corn and chicken strips on top. Drizzle with dressing before serving.
