Fish is so good for you – especially salmon. Salmon is said to contain so many Omega-3 acids and other nutrients that you need to stay healthy. It’s also a really lean protein, so it’s great for those of you who are watching what you eat. Unfortunately, not many people like the taste of fish. This crispy garlic parmesan salmon recipe is sure to change all of that.

Your taste buds are going to flip over the flavor of this fish. Not only is it baked, which is wonderfully healthy, it’s got panko breadcrumbs, parmesan, and other yummy ingredients that will make you think you’re actually cheating on your diet. Even if you aren’t watching your weight, this salmon recipe is sure to become a favorite quickly. It’s so delicious and so very crispy!

I know what you’re thinking. If you’re like me, you’ve never really been able to cook salmon so that it tastes great, right? Let me tell you, this is unlike any salmon recipe you’ve ever tasted. And, it’s very easy to make and takes less than half an hour from start to finish. It will also pair perfectly with this BLT pasta salad if you need a really good side dish.

This is a really healthy meal that is perfect for those busy nights, because it takes so little time to make. You can prep it and put it in the oven while you help the kids with their homework or relax in front of the television for a few minutes. With garlic, dill, and lemon zest, it’s got a flavor that you just won’t believe comes from fish.

I really love trying new recipes, and this one is definitely among my favorites. It’s so hard getting kids to eat fish, but this is sure to turn that around. I had a difficult time getting my kids to eat cabbage too until I tried this cheesy cabbage casserole. I really think this salmon recipe will get them hooked on fish.

Crispy Garlic Parmesan Salmon

Prep Time: 10 minutes

Cook Time: 10 minutes

Total time: 20 minutes

Ingredients:

2 pounds salmon fillet;
2/3 cup panko breadcrumbs;
1/3 cup grated parmesan;
1 tsp dried dill;
¼ cup olive oil;
1 tsp garlic powder;
1 tsp lemon zest;
1 tsp salt.

Instructions

1. Preheat oven to 400 F (200 C).
2. Combine breadcrumbs with oil, zest, cheese, garlic and dill.
3. Rub salmon fillet with 1 tsp salt and cover with breadcrumbs.
4. Bake for 10-12 minutes (depending on thickness). Serve with lemon wedge.
