Meringues can be tricky to make; with all the whisking involved, it just feels like too much of an effort. For me, they usually take even longer than they should because I always seem to mess up the first batch. So after trawling the internet for some help on the subject, I found the perfect meringue hack that shows you how to make meringues in just a couple of minutes… in the microwave! If you’re one of the lucky few who can actually whip up the perfect meringue in the traditional way, keep this method in your back pocket for one of those days when you’ve overestimated your time management skills and need to make a quick dessert.

The time in the microwave will depend on your microwave wattage and how soft or crispy you like your meringues. I suggest you let it cook for one minute, test it out, and take it from there. You could also adapt the meringue size and cooking time for a larger meringue to use as a Pavlova base.
