Olive Garden is one of my favorite places to eat. Unfortunately, I only get to treat myself once in a while since eating out is so expensive. That’s really sad because their Italian wedding soup is really delicious. So, I started thinking about maybe trying to make it myself at home.
I found a wonderful recipe that you can make in your slow cooker and let me tell you, this is even better than what you get at Olive Garden.
I love the fact that it’s made in the slow cooker. That means that I can busy myself with other things while my favorite soup cooks. I really do love my slow cooker and use it quite often when my weekdays are filled with appointments and other tasks.
It allows me to put a wholesome meal on the table without worries of spending too much time in the kitchen. I love any dish that tastes wonderful and still gives me plenty of time with my family while I prepare it, like this white bean with crispy bacon soup.
So, this Italian wedding soup has all of the traditional ingredients like chicken, onion, carrots, bulgur, garlic, and parsley. I love mine with spinach as well, and you can add that if you want. Also, if you love spinach, try this spinach and bacon frittata for breakfast. It’s delicious.
Anyway, back to the soup. You cook it in the slow cooker for about four hours, so you have plenty of time to clean the house, play with the kids or even work if you need to. It will finish itself and then you just have to serve it. I think it would go wonderful with some French bread or warm rolls.

Simple Italian Wedding Soup
Prep time: 10 minutes
Cooking time: 4 hours
Total time: 4 hours 10 minutes
Yield: 6 servings
Serving size: 450 g (16 oz)
1 ½ cup of cooked chicken, shredded
7 cups of chicken broth
½ large white onion, chopped
2 small carrots, chopped
⅔ cup of bulgur, rinsed
1 tbsp. of dried Italian herbs
1 garlic clove, minced
Chopped fresh parsley for serving
Salt and pepper to taste
1. Place all of the ingredients into your slow cooker.
2. Cover with the chicken broth.
3. Cook on HIGH for 4 hours or until bulgur and vegetables get soft. Add salt and pepper to taste.
4. Serve sprinkled with chopped parsley.

Assemble all of your ingredients in a slow cooker and then relax while dinner cooks itself
